Because I'm a former health inspector, I'll say this plainly: this is an educational certificate from me, nothing more. It is not an SNHD credential, it is not a food handler card, and it changes nothing on inspection day. What changes inspection day is what you now know.
No printer handy? Leave the name blank, print it later, and write the name in by hand. It works both ways.
